Their approach is decidedly hands-off, working with organically farmed fruit, spontaneous fermentation and minimal intervention in the cellar. The result is the kind of wine that feels lively and expressive rather than overly polished.\u003c\/p\u003e\n\u003cp\u003eThe cuvée itself has changed over the years, with RAB working with different varieties and vineyard sources depending on the vintage. That makes Crevette Mayo less about a rigid recipe and more about making a fresh, highly drinkable white from the fruit available to them.\u003c\/p\u003e\n\u003cp\u003eCrisp, dry and a little unconventional.
