It’s medium-bodied with lively acidity and a pleasant tannic grip, giving you all the structure of Bordeaux without feeling heavy or overly polished.

Les Chais du Port de la Lune is an urban winery right in the city of Bordeaux. Rather than owning a traditional château surrounded by vineyards, they work with growers and bring the grapes into the city to make the wine. Their goal is pretty simple: make wine where people actually drink it, while working with organically farmed fruit and keeping relationships with growers close to home.

Canon comes from an old mixed vineyard where different grape varieties grow together in the same parcel, an old-school practice known as complantation. The wine gets a gentle maceration before spending six months in old barrels, and even includes a tiny amount of white grapes alongside the reds to bring a little extra freshness.

Bordeaux, but loosen the tie a little. Fresh, savoury and made to be drunk rather than admired from across the room.
