A bright, energetic white with fresh citrus, crisp orchard fruit and delicate florals, followed by a little herbal character and a clean, mineral finish. Light on its feet and completely dry, with plenty of acidity and just enough texture to keep it from feeling simple.

Crevette Mayo comes from Vignoble du RAB, the small project of Thydha and Nicolas Gonnin. Their approach is decidedly hands-off, working with organically farmed fruit, spontaneous fermentation and minimal intervention in the cellar. The result is the kind of wine that feels lively and expressive rather than overly polished.

The cuvée itself has changed over the years, with RAB working with different varieties and vineyard sources depending on the vintage. That makes Crevette Mayo less about a rigid recipe and more about making a fresh, highly drinkable white from the fruit available to them.

Crisp, dry and a little unconventional. The pink stripes don't hurt either.
